Set aside. Combine the peanut butter, honey and chocolate milk in a medium heatproof glass bowl and place over a pot of simmering water. Allow the mixture to become warm and smooth, stirring to completely incorporate. Remove from the heat and set aside. Meanwhile, mix the oats, flax seeds, protein powder, dried cherries and half of the chocolate chips in a large bowl.

4. Pour the peanut butter mixture into the oat mixture and stir until well combined. Transfer the mix to the prepared pan and press the mixture into an even layer. Sprinkle over the remaining chocolate chips, lightly pressing them into the base, and freeze for 15 minutes to allow the mixture to set.  Remove from the pan and cut into 24 bars, then transfer to an airtight container and freeze. When ready to eat, remove from the freezer and allow to thaw slightly, 2 to 3 minutes, before enjoying.

How to make pumpkin soup. Place peeled pumpkin… https://hilltopperk.com/2019/11/29/how-to-make-pumpkin-soup-place-peeled-pumpkin/ Fri, 29 Nov 2019 12:44:26 +0000 https://hilltopperk.com/?p=651 In a large cast-iron skillet over medium heat, cook the bacon until crisp, 12 to 14 minutes. Remove to a plate and set aside. Drain the grease from the skillet but do not clean. When cool enough to handle, tear the bacon slices in half. Meanwhile, mix the mayonnaise and hot sauce to taste in a small bowl. Season with salt and pepper. Using a biscuit cutter or the rim of a glass, cut a hole in the center of each Texas toast slice. Melt 2 tablespoons of the butter in the bacon skillet and add 2 of the Texas toast slices.

Toast the bread slightly, 1 to 2 minutes. Crack an egg into the hole in each piece of toast and sprinkle the eggs with salt and pepper. Cook the eggs until set on the bottom, 2 to 3 minutes. Using a spatula, carefully flip the toast with the egg, season the other side and spread with the mayonnaise mixture. Top each with a slice of cheese to slightly melt and cook until the egg is the desired doneness. Remove to a cutting board and repeat with the remaining butter, toast, eggs, mayo mixture and cheese. To build the sandwiches, divide the bacon between 2 of the egg-in-a-hole toast pieces, on top of the cheese. Top each with some tomato slices and lettuce, then top with a remaining egg-in-a-hole toast piece. Serve immediately or wrap in foil to keep warm.

Our best spaghetti bolognese is super easy and a true Italian… https://hilltopperk.com/2019/11/29/our-best-spaghetti-bolognese-is-super-easy-and-a-true-italian/ Fri, 29 Nov 2019 12:41:15 +0000 https://hilltopperk.com/?p=647 Set a large skillet over medium heat and add the sausage. Cook until browned and cooked through, 7 to 9 minutes. Remove the sausage with a slotted spoon and drain on a paper towel lined plate. Without cleaning the skillet, add the apples, onion and sage and cook until the onion has softened, 2 to 3 minutes. Remove the pan from the heat and set aside. Mix together the eggs, milk and half-and-half in a large pitcher or bowl. Season with salt and pepper and set aside. Grease a large casserole dish with some butter. Layer in half the English muffins, half the sausage, half the apple/onion mixture and half the cheese. Repeat with the other half of the same ingredients, ending with the cheese.

Slowly pour the egg mixture all over the top. Cover with plastic wrap and refrigerate overnight. Remove the pan from the fridge 20 to 30 minutes before baking. Preheat the oven to 350ºF. Replace the plastic wrap on top of the casserole with aluminum foil. Bake for 35 to 40 minutes, then remove the foil and continue to bake until the top is golden brown and slightly crisp, 10 to 15 minutes more. Sprinkle with the chopped parsley. Serve warm and enjoy.
